
Ingredients
5 eggs
500g tub of mascarpone or cream cheese
200g sugar
4 shots of espresso
I pack Ladysfingers sponge biscuits or similar
Cocoa powder
Method
1. Separate the egg whites and whisk until firm (mix A)
2. Pour sugar over egg yolks and whisk immediately by hand until all sugar has dissolved and the yolks are pale in colour (mix B)
3. Pour espresso into a bowl and dip each sponge finger into it before placing in a
flat dish. Stop at one layer
4. Add mascarpone to egg whites (mix A) and gently fold mixture into egg and sugar mixture (mix B)
5. Spoon a layer of this creamy mix onto sponge fingers.
6. Create a second layer of fingers dipping into coffee first.
7. Spoon another layer of the creamy mix on top
8. After the third layer, end with creamy mix
9. Sift cocoa powder on top
